Two Easy Gluten-Free Cake Recipes

If you’re worried about maintaining a gluten-free diet, you may be tempted to cut out all cakes from your diet entirely – but you don’t have to! In fact, there are many great gluten free cake recipes available out there – and there are even recipes for gluten-free brownies too!

This gluten free cake recipe for carrot cake is a great place to start!

Gluten-Free Carrot Cake Recipe

To make this carrot cake, you’ll need:

¾ cup of granulated sugar
½ cup applesauce
¼ cup canola oil
1 large egg white
1 large egg
¾ cup of gluten-free flour
¾ teaspoon vanilla extract
½ cup tapioca flour
1 ½ teaspoons ground cinnamon
1 teaspoon baking soda
1 ½ teaspoon xanthum gum
¾ cup raisins
2 ½ cups grated carrots (around ½ pound)
¼ cup diced fresh pineapple.

First, preheat your oven to 350 degrees. Beat the sugar, oil and eggs together and then add your vanilla. In another bowl, mix the flour, xantham gum, cinnamon, salt and baking soda. Add the wet and dry ingredients together. Then add the raising and walnuts. Next comes the carrots and pineapple. Mix everything together well and bake for 35 to 45 minutes. To make sure this gluten free cake recipe comes out right, let it cool completely in the pan!

Gluten-Free Sponge Cake Recipe

Compared to most gluten free cake recipes, this one is fairly simple. It can even be used to make other things like swiss rolls, trifles or even lady fingers in tiramisu!

This gluten free sponge cake recipe requires:

¾ cup corn flour
3 eggs, separated
1 teaspoon baking powder
1 pinch salt
½ cup sugar

That’s all you need! Next, to make it you need to sift the baking powder, salt and corn flour together. Then beat the eggs whites until they’re stiff (but not dry). Beat in the egg yolks. Beat in the sugar gradually until your mixture forms a figure 8. Fold in the dry ingredients and then divide everything into 2 well-greased 8-inch sandwich pans. Bake the mixture at 350 F for around 20 minutes, and then take the pans out and let them cool. After they’re ready, put your choice of either icing or whipped cream and jelly on top of one and place the other on top of it!
